Preheat the oven to 180C/350F and line a cupcake tray with 12 cupcake liners.
Add the flour and granulated sugar into a bowl and mix, add the soy milk, vegetable oil, lemon juice and lemon zest. Mix until it forms a light batter.
Divide the batter evenly between 12 cupcake liners and bake for 20 mins or until a toothpick inserted into the centre of one of the cupcakes comes out clean.
Prepare your Amarula icing, add the vegan butter, icing sugar and 2 oz of Amarula Plant Based to the bowl of your stand mixer. Mix at a slow speed and increase the speed as it comes together. Add more Amarula and mix if the icing is too stiff.
When the cupcakes are completely cool, pipe the icing on top.
