  • 120 ml Amarula Plant-Based
  • 40 ml green curaçao⁠
  • 60 ml gooseberry syrup⁠
  • Zest from 2 limes⁠

Gooseberry syrup

  • Fresh gooseberries⁠
  • Sugar⁠

Method

Gooseberry syrup and crisp

  1. Split the gooseberries.
  2. Place them in a jar with a lid and cover in sugar.
  3. Leave it and let sit for a couple of days until all the sugar has melted.
  4. Mix and strain the fluid to get a sweet gooseberry syrup.
  5. Mix the remains from and spread it on a baking sheet to make the gooseberry crisps.
  6. Leave to dry at approx. 70 degrees in an oven overnight.⁠
  7. Take it out when dry and divide it into smaller pieces.

Drink

  1. Pour Amarula Vegan, green curaçao and your gooseberry syrup in a blender.
  2. Grate the zest from 2 limes.
  3. Top with crushed ice.
  4. Mix everything until you get a slushy consistency.
  5. Pour into a glass and garnish it with the gooseberry crisp.
  6. Serve with a spoon and straw.⁠

PS. For a quick version of this drink you can replace the gooseberry syrup with, for example, elderberry juice!
